This is the quick and easy version of a Gingerbread House. Hot glue the house together. All the kids want to do is get to the decorating. After years of waiting for the frosting to dry I decided to hot glue. We never eat the house ayway. Only the candy!!
One tub of vanilla icing and candy from kit. Sometimes I add more but this year we just used what we had in the box.
Let them have a blast. Fun!!

Tried a new recipe today and OH MY!! Are they ever good!.It's snowing outside today in Tennessee.
What a cozy day to create a new Christmas Cookie. Christmas music on the IPOD, Lasagna is in the oven and Cheesy Potato Soup on the stove. We are getting our jammies on early and watching ELF. Good Times.
Oh and today I forgot to put on mascara before Church. Well today was Baptism day and needless to say I'm glad I forgot the mascara. It would have been gone anyway.I love our new Church. This was our first experience in seeing adults being baptised and it was beautiful. I loved it! Happy Sunday =)

Christmas at Sweetie Cakes

Lots of Sweet Treats coming out of the oven this Holiday Season. The kitchen smells Wonderful!
From top to bottom...Molasses Snowflakes, who would have thought Molasses Cookie dough is so easy to work with for cutouts. Polish Kolachky, fruit filled delicate pastry dough melts in your mouth. Plus, its not overly sweet so you can eat more than one. French Puffs, great for Christmas Morning! Molasses Red Tree Cookies for my favorite local Coffee Shop Restaurant! They are big so it's like a meal with coffee. Last but not least I have to make something for all of the kids teachers. A box of Sweetie Cakes Cupcakes decorated for Christmas! Yum!!

The Pros and Cons of Shortbread.

Let's face it there are pros and cons to everything, including cookies.

Shortbread is at the top for me.

I analyze everything and I do mean everything.!!!

We can start with what do I want to bake this week?

I could bake shortbread everyone loves it when I do...pro.

It uses a lot of butter...pro & con.

Prep time..the butter must be room temp....con.

You have to plan ahead for the room temperature butter...con.

Shortbread only has four ingredients...pro. Make it anytime!

Who doesn't ever have flour, sugar and butter in the house?

It takes time to whip the butter to perfect consistency...con.

Like earlier, prep time. I am usually multi tasking so this "whip time" as I call it, allows me time to do just that, "Multi Task."Pro!

The consistency is very thick and its difficult to spread in the pan with the parchment cut perfectly with a 1 inch overhang...CON! time consuming..art classish :(

That being said....clean up is a breeze....PRO~!

Bake until golden brown...40 minutes. ~Multi-Task Time...pro!

Right out of the oven sprinkle with sugar....Pro! Yummy

and cut into fingers...con! Because you can't have one yet!

Let cool completely...con! I have to leave the house because I can't take the wait...con!

Once cool...gently take out of pan with spatula...first one usually breaks...pro! I get to eat it!

Sugar all over my lips....??? Messy but yummy!

Shortbread is so good you can keep eating the cookies until your sick....con. But pro in a way since you can't taste the richness of these delicate buttery delights.

What is it about a cookie that is so wonderful? Maybe it's just my family that thinks this is true. But I happen to think they are always going to be the best. Let me just state some known cookie facts.

*Most people have a favorite!

*Cookies are for all ages young and old.

*They are acceptable to eat any time of the day.

*They are great right out of the oven as well as two days later.

*Easy to make.

*Everyone has a special ingredient or tweek to their recipe that makes it the "best ever."

*Grandma always has a famous recipe.

*Every culture has a "cookie."

*No matter what you do for your kids after school they will always remember the times you had warm cookies and milk waiting for them when they get home from school. Even if you only do it once.

*Nothing better than eating warm cookies and watching "The Biggest Loser" on T.V. or Survivor (our favorite)!

*Cookies make the house smell wonderful.

*Realtors recommend you bake cookies prior to showing your house...wonder why?

*Cookies will never go out of style!

*One might say "NO" to dessert if it is a piece of pie, cake or even cupcake but a cookie? Oh sure I'll have one.

*Cookies are just simply "The Bomb."

And COOKIES are great with coffee!!

I love this recipe! Its quick and so easy. The cupcakes always turn out perfect and round on top. I love that. My favorite part about making these is they last a good week in an airtight container in the frig. I truly think they get better each day. So, I just told you that I eat one a day! OOPs!

All of these wonderful ingredients make the most amazing VEGAN cupcakes!
Yes I said VEGAN.
Zero dairy found in this CAKE!
No one will ever know!

Mix all ingredients together.

They bake up super nice.

Well, today I will be heading to the Farmers Market to check out the fruit selection. What will it be?
In the meantime I am baking melt in your mouth delicious Shortbread Cookies. They are a favorite of mine and the family. Also baking up Chocolate Cupcakes with Chocolate Icing. I am making the Vegan version of Chocolate Cupcakes. This recipe is so delicious and so moist. No one can ever tell that it is vegan. Shhh!

I have been trying out different kinds of cookie recipes lately. First I wanted a great peanut butter cookie recipe and I came up with a delicious one. Using crunchy peanut butter and rolling them in sugar prior to baking. I didn't do the traditional fork on the top and found them to be very chewy in the center when baked in ball form. Bill and Aubrey LOVE them! One day I added chocolate chips and it was over the top delicious!
Second I made Snickerdoodles. I used the recipe that my Mom had in her cookbook I made as a kid.
She has this hand written cookbook binder she made using notebook paper. I wore that book out as a child. The snickerdoodles turned out really good. Chewy and with that hint of cream of tarter after taste. It took me back many years.

The making of my Fudgy Chocolate Icing

Today I am making my creamy fudgy chocolate icing. I wanted to make this today because my wonderful husband made me an icing tip I have been wanting. I have looked all over Nashville for an icing tip that would create a smooth swirl. Stores and Internet carry them BUT they are sold out everywhere. I have seen them use this tip on Cupcake Wars. We looked everywhere and impatient me really wanted to try this technique soooo my husband took a long icing tip to his workshop and cut it off. Chop ! Smoothed it with something like a grinder and wa-la I have my icing tip! He is awesome and so is this tip. At first it was a bit lopsided getting used to it but toward the end I had the hang of it. The result yummy yellow cupcakes with a delicious swirl of fudgy chocolate icing. I already ate one!

I start with butter and shortening. Whip it in the mixed until fluffy. I then add good quality dutch processed baking cocoa I order online from a chocolate company. Whip Whip! In goes the vanilla and powdered sugar. Scraping the bowl and whipping until FLUFFY!

This is the end result!

I am so excited! I made cupcakes for my friend Melanie's baby shower. She is having a girl and her name is Mattie. This is the first time I used fondant. I might just have to get a book on this because it really turned out super cool! Makes me want to do more fondant creations.

Honey Apple Cake with Honey Butter Glaze

1. I measure out all of my ingredients .
Sugar Flour Eggs Honey Oil Vanilla Chopped Apples and Spices.
2. Next I blend the eggs, sugar and honey together.

3. Add all of the dry ingredients and mix well.

5. Pour into Bundt Pan & Bake

4. Add apples and pecans to batter.
Thick and gooey!

My New Cupcake Liners

I am testing new cupcake liners! Sounds boring I know but it is VERY complex. Every size, shape and type of liner varies for how cupcakes or muffins bake up. The muffin recipe is awesome! These are Blueberry and they baked up perfect in this liner. I had to do three batches to see how much batter should go in this cup!

All week I have been trying to find time to bake these new recipes. New cookies!! I have been searching for the best Peanut Butter Cookie and Oatmeal Cookie Recipes. I found the peanut butter recipe to try, tweeked it a bit and OMGoodness! Yummy! My family loves peanut butter sooo it was a hit! Now off to find the best oatmeal cookie recipe! I know my husbands grandma had a great one I think I will start there. In the mean time I am baking Honey Apple Cakes with honey butter glaze! I will post a picture later!
